OUR STORY

A good and hearty chili, packed with variety of meat. This one is good for those Firehouse Holidays when you need a good meal.

 

Ingredients

  • 4 pounds - steak of choice
  • 2 pound - ground beef
  • 2 pound - sage sausage
  • 2 teaspoons - sea salt
  • 4 teaspoon - fresh cracked black pepper
  • 1/2 cup - olive oil
  • 6 - large onions, diced
  • 4 - green bell peppers
  • 8 - cloves garlic, minced
  • 2 - jalapeños, seeded and finely diced
  • 6 - tablespoons chili powder
  • 2 - tablespoon brown sugar
  • 2 - tablespoon ground cumin
  • 2 - tablespoon dried oregano
  • 4 - dried ancho peppers
  • 6 - fresh chopped tomatoes
  • 6 - bay leafs
  • 2 - can black beans, drained and rinsed
  • 4 - can kidney beans, drained and rinsed
  • 2 - small can of green chiles
  • 1 - 46 ounce can of tomatoe juice

Directions

  1. Pan sear meats, onions and peppers with olive oil. Add to pot with all remaining ingredients. Bring to boil and then simmer 3-4 hours. Remove bay leafs. Remove ancho peppers if you desire. Garnish with sour cream, shredded cheese of your choice and corn bread. Feeds 15-20
